Characteristics

It is French inspired , in my opinion. Soft and easy on the palate. Hints of apple and nuttiness. Not overpowering with sour flavor. Just enough to enhance a good cultured butter.

  • 50% Water

Feeding ingredients

  • 100% Starter
  • 100% King arthur bread flour

Combine equal parts, by weight, starter, bread flour & water.

Working method

Origin of my starter began with an apple, flour and water. Allowing the fruit to slowly to ferment over the course of a week then using that liquid to create and feed my starter in the beginning has given a subtle apple note to all the loaves it breaths life into.
