I had done it many years ago with little success. Then when I watched the series Cooked by Michael Pollan, I got motivated again

Characteristics

It has a great balance of acetic and lactic acid flavors. It rises exceptionally well and have to use small inoculation amounts to keep it from rising too fast.

Recipe

Starting ingredients

  • 100% Rye
  • 200% Pineapple juice

Feeding ingredients

  • 20% Rye
  • 80% Bread flour
  • 100% Water

I generally store my starter in the fridge, but will take it out the day before I bake to start building levain
