Starting ingredients

  • 50% Hi gluten flour
  • 50% Water

Feeding ingredients

  • 5lbs Flour
  • 6lbs Water

Remove all but 6#, add 5# water and 6# Hi Gluten and mix well

Working method

Started sour in the traditional way although we had a few fruits around it to promote "wild yeast" growth. We fed it 2 - 3 times a day in the beginning..
